Listening to your body sounds like a really good plan! If your body needs meat, I think it's sensible and not unfair to feed it what it needs. If you are worried about environmental impact, there are more sustainable meat sources - or you can worry about that once you have your health where you want it. I think that should be the first priority!
That said, I notice you didn't mention eggs! A pretty decent protein source, and not an unexpected breakfast food. A bit more sustainable than meat, too. Not suggesting an every-meal thing, but might be a useful tool.
